Quick Cannabis Infused Salad Dressings

We are so excited for spring!

Early greens, CSA sign-ups, Farmer’s Market schedules; one of the best parts of living in the PNW is looking forward to the bounty summer is about to provide. Match the freshness of your produce with one of these quick dressing recipes, just dump all the ingredients into a blender or food processor and blend!

 

 

 

 

LemMend Ginger Poppy Seed Dressing

Makes 1.5 cups

Contains 20 mg/THC

Ingredients

4 Tbsp. CYOC LemMend

3 tablespoon fresh ginger (finely grated)

¾ cup extra-virgin olive oil

2 Tbsp. apple cider vinegar

1 ½  tsp. poppy seeds

1 juiced lemon

Kosher salt and freshly ground black pepper to taste

Step 1: Place all ingredients in your blender and pulse until all ingredients are blended well.

Serve with: Any type of greens; bib lettuce, field greens, romaine, red leafy lettuce, spinach etc. This dressing enhances bitter greens like arugula and kale, try with a crumbly blue cheese for a smoky, tangy treat. Enjoy!

 

 

Great Green Goddess Dressing

Makes 1.5 cups

Contains 10 mg/THC

 DO AHEAD: Can be made 2 hours ahead. Cover and chill until serving.

Ingredients

½  cup mayonnaise

1/3 cup buttermilk

2 Tbsp. CYOC Olive Oil

¼  cup chopped fresh chives

¼  cup coarsely chopped flat-leaf parsley

1 Tbsp. chopped fresh tarragon

3 fresh large stemless cannabis leaves (optional)

1 Tbsp. fresh lemon juice

2 anchovy fillets packed in oil (drained, chopped)

1 chopped garlic clove

Kosher salt and freshly ground black pepper to taste

Step 1: Place all ingredients in your blender and pulse until all ingredients are blended well.

Serve with: Any type of greens; bib lettuce, field greens, romaine, red leafy lettuce, spinach etc. This amazing dressing enhances poultry and fish added to your salad. Enjoy!

 

Miso Tumeric Dressing

Makes 1.5 cups

Contains 20 mg/THC

 

Ingredients

4 Tbsp. CYOC olive oil

1/3 cup rice vinegar (unseasoned)

1 small carrots (large or 2, peeled, finely grated)

2 Tbsp. miso paste (I used naturally aged sweet white rice miso)

2 Tbsp. ginger powdered

½ tsp. turmeric powdered

2 Tbsp. toasted sesame oil

1 Tbsp. pure maple syrup

½ serrano peppers (seeded, finely chopped)

Kosher salt to taste

Step 1: Place all ingredients in your blender and pulse until all ingredients are blended well.

Serve with: Any type of greens; bib lettuce, field greens, romaine, red leafy lettuce, spinach etc. Use with shredded cabbage for an asian slaw, or to enhance poultry and fish added to your salad. Enjoy!
